Eat Yer Veggies is a nutrition coaching practice & resource hub fueled by the notion that food is medicine at all stages of life. We believe that the intersection between health & sustainability is where the greatest healing & best health outcomes can be found.
Eat Yer Veggies was created by Caylee Clay RDN CDN, a dietitian-nutritionist & yoga instructor who specializes in treatment autoimmune diseases. With a personal diagnosis of psoriasis, Caylee is pushing the boundaries on our understanding of autoimmune diseases, plus how healthy foods, medicinal herbs, & holistic lifestyles changes can promote better outcomes for those who suffer from autoimmune conditions.
Additionally, Caylee is passionate about environmental causes & believes that a more sustainable future necessarily includes promoting healthier diets, & vice versa.
Caylee Clay is a nationally credentialed Registered Dietitian-Nutritionist, as well as a New York State Certified Dietitian-Nutritionist. She completed her postgraduate Dietetic Internship at Hunter College and holds a Bachelor's of Science in Nutrition and Dietetics from New York University. Caylee has studied under leaders in the health & nutrition world, including completing an independent study & graduate work with Marion Nestle, author of Food Politics. She is also a 200-hour certified yoga instructor.
Caylee's interest in nutrition began with her own health problems. Growing up, Caylee was primarily exposed to packaged ultra processed foods with questionable ingredients. As a result, she suffered from chronic headaches and stomach aches, that finally were relieved once she changed her diet to healthier foods. As someone who had to learn how to enjoy healthy foods herself, she knows how to work with you no matter what your diet currently looks like.
When she isn't cooking old favorite recipes or discovering new ones, Caylee loves to spend her spare time hiking, gardening, and biking.
